When Meredith at Like Merchant Ships, posted about having to put together a last minute cookie tray, it reminded me of this great recipe. My sister passed it on to me when I got married. It just doesn't get any easier, and if you are a couponer with a big cake mix stash, you will never be without cookies again.
Ingredients:
1 Box cake mix, any flavor
2 eggs
½ c of vegetable oil (I like canola)
Mix all ingredients and drop by rounded teaspoonfuls on an ungreased cookie sheet. Bake for 9-12 minutes at 350 degrees. (The recipe gives a yield of 3 doz., but I usually get less)
The beauty of this recipe is that the sky is the limit. Our favorite combination is chocolate cake mix with chocolate chips. However, you could use any flavor cake mix you want. Add any flavor chips, dried fruits, nuts, oatmeal, etc… You can also make these into sandwich cookies, using a little jam, icing, or ice cream. How about putting a thumbprint in them and adding a little filling? Need something fancy and fast? Drizzle a plain chocolate cookie with melted white baking chocolate. You'll look like a gourmet cook!
