Produce Update

Yesterday, I mentioned that I was trying to use up some produce before we went out of time. As always, my ideas were bigger than my schedule! But, I did manage to put everything to use, if not for my family, for someone else. Here is the breakdown:

2 Cantaloupe (we ate one of these at breakfast today)

¼ Watermelon

6 Bananas (we ate one of these at breakfast today)

4 Lg. Roma Tomatoes

½ qt of Juliette Tomatoes

1 Head of Cabbage

2 Med. Zucchini

2 Med. Yellow Squash

1 Bag of Salad

½ Bell Pepper

7 Peaches

2 Grapefruit

1 ½ lbs. of Green Beans

We managed to eat the cantaloupe, watermelon, one grapefruit and the bananas with meals and snacks. I made Everlasting Slaw with the cabbage, bell pepper, and half a purple onion that I forgot to mention. I froze the peaches and green beans for use at a later time. The bag of salad and ½ of the Juliettes went to a neighbor who was not feeling well.

I ran to Sam's and picked up a pizza for my neighbor's family to go with the salad. Of course, I chucked my own dinner plans at that point. I didn't have the heart to tell my 8 yr. old that we were eating Squash Casserole after purchasing a pizza for the neighbors! All the items that didn't get crossed off the list went to another friend and neighbor.

Using Up Produce Before Travel

 

We are getting ready to head out of town for 5 days. Unfortunately, I got a little produce happy when I went shopping this week, and I woke up to a fridge full of fruits and veggies that I don't want to waste. My mission for the next 24 hours is to use up as much of the produce as I can before we leave in the morning. Here's what I'm starting with:

2 Cantaloupe (we ate one of these at breakfast today)

¼ Watermelon

6 Bananas (we ate one of these at breakfast today)

4 Lg. Roma Tomatoes

½ qt of Juliette Tomatoes

1 Head of Cabbage

2 Med. Zucchini

2 Med. Yellow Squash

1 Bag of Salad

½ Bell Pepper

7 Peaches

2 Grapefruit

1 ½ lbs. of Green Beans

 

 

Here's my plan:

1. Remind kids to eat bananas and watermelon for snack.
2. Make Squash Casserole, Salad, and Fruit for dinner.
3. Eat a salad with lunch.
4. Freeze or can tomatoes, peaches, and green beans.
5. Use cabbage and bell pepper to make Everlasting Slaw.
6. Have fruit with breakfast in the morning

I have a friend to share my leftovers with, so nothing will truly go to waste. I'll see what I can do with what I have, and I'll fill you in when I'm finished.

This Week’s Totals

 

I'm going to try something new this week. Instead of taking pictures of everything I purchased and following it up with lots of details, I'm going to list some highlights and my totals. I'm also going to link to a shop that I thought was especially good.

I spent $45.44 this week. The highlights included 8 boxes of Fiber One muffin mix, and 5 boxes of Fiber One bars for $3.92. These were on clearance at HG Hill and I had coupons. Yeah! I also purchased $19 worth of ground chuck at HG Hill for $1.69/lb. I managed to provide 2 dinners with sides, dessert, and a breakfast for another family. Not a bad week!

You can check out a great shop by Nashvillian Earthy Mama at I Prefer Publix. She discusses using overage to cover tax. I've not had luck with this technique myself, but I'm interested to hear if you have.

Backpacks for Foster Care

Children often arrive in the foster care system without anything to carry their things in. You can drop off new and like new backpacks at Christ Community Church on Hillsboro Rd.
